Shaftesbury Capital has announced that Burro, a dining concept delivering high-quality Italian cuisine, has opened in Covent Garden.

Conor Gadd, chef co-owner of Trullo, one of London’s most renowned restaurants, has opened Burro in Floral Court, Covent Garden. Burro, translating to “butter” in Italian, celebrates a produce-led approach to Italian cooking with warm hospitality, values which connect his native Ireland and beloved Italy. The c4,000sqft restaurant is a hub for comforting classics, with dishes celebrating the core principles of Italian cooking, with care and exceptional local produce.

Burro adds to a long line of chef-led concepts within Covent Garden, including The Barbary, Café Murano, ST JOHN Neal’s Yard Bakery and Bar, Story Cellar and Buvette, which is due to open in Neal’s Yard later this year. This opening represents a new chapter for Floral Court, following Shaftesbury Capital’s continued investment and long-standing stewardship in the area, and its ongoing commitment to securing the highest quality operators and culinary experiences across the portfolio.

Emma Matus, head of restaurant leasing at Shaftesbury Capital, commented: “Our focus is on curating best-in-class operators who reflect and elevate the distinctive character of Covent Garden. Burro’s arrival at Floral Court embodies our commitment to thoughtful innovation, exceptional quality and chef-led creativity. It is a standout addition that further enhances the neighbourhood’s reputation as one of London’s most dynamic, compelling and sought-after dining destinations.”

Conor Gadd, founder of Burro, added: “Never in my wildest dreams did I imagine opening a restaurant in Covent Garden. But as soon as I saw the room – and the courtyard – I knew it was an opportunity I couldn’t miss. It’s been a labour of love with a brilliant team, and we can’t wait to welcome guests with some amazing food served in the warmest, most elegant of rooms.”

The opening of Burro follows the recent news that Inception Group has signed for a new flagship location in Covent Garden’s historic Market Building. Set to be a Mr Foggs Tavern, the 4,500sqft site will add to the neighbourhood’s mix of experiential F&B names, as well as the 24 dining concepts which joined the Shaftesbury Capital portfolio in 2025, covering both independent operators and international entrants. This included Harry’s at 11-12 Russell Street, ADOH! on Maiden Lane, and Cô Thành on Henrietta Street.
